In a remote region in southeast Morocco, where the Sahara Desert meets the High Atlas Mountains, an age old well was dug centuries ago into the inhospitable barren rock face from which salt water is hauled up and put into a garden of salt pans, beneath the hot sun. Due to the extreme and remote location of the well, there is only a limited amount of this highly treasured salt available.
There is an old story as to how the salt came into being: As Atlas held the world on his shoulders, the suffering of the people saddened him so much that he was brought to tears. His tears collected together at the foot of the mountains, where the Sahara begins. The hot sun consequently changed his tears into one of the Sahara's greatest treasures.
This coarse, pinkish salt has a wonderful crunch and is superb on lamb or goat kebabs, tagines and curries.
